Finally, Stainless Steel Pans That Survive the Dishwasher

For years, I tested cookware professionally, from enameled Dutch ovens to nonstick skillets. Nearly every high performing piece came with the same caveat: hand wash only. That’s understandable for anyone who wants their pots to last, but as a single mom with two kids in school, I needed a faster path. So I threw my supposedly dishwasher safe stainless steel All-Clad pans into the machine anyway, night after night.

After a few years, those All-Clad pans started turning dangerous. I would reach into the bottom rack and come away with a cut. The culprit was erosion. The aluminum cores had been eaten away by harsh detergents, leaving edges as sharp as a razor. This became the subject of a class action lawsuit in 2022, and All-Clad no longer advertises those pans as dishwasher safe.

Instead of replacing my cookware with another full set that would still require hand washing, I decided to rebuild my collection piece by piece. I started with two Misen sauciers, a 2 quart and a 3 quart. They are now the most used pans in my kitchen, and they go in the dishwasher every single night.

The Hidden Structure of Stainless Steel

Stainless steel is often viewed as a nearly indestructible material, but it is actually a carefully engineered alloy of iron, chromium, and carbon. Not all stainless steel is the same, and the dishwasher can cause cosmetic dulling or discoloration. Those issues don’t affect performance, but they signal that something more serious might be happening.

Steel, by itself, is a mediocre heat conductor. That’s why premium cookware relies on a core of aluminum, copper, or graphite to distribute heat evenly. On many pans, including the All-Clad D3, that heat conducting core is sandwiched between stainless steel layers but left exposed along the rim. Harsh dishwasher detergents can degrade that exposed core over time, and as it wears away, the steel layers can become sharp and dangerous.

Why Misen Is Different

Misen’s design eliminates the risk entirely. The aluminum core is fully enclosed in a thick layer of stainless steel, so there is no exposed metal for detergents to attack. The result is a pan that is genuinely dishwasher safe, a claim Misen makes right at the top of its product page.

I’ve tested that claim more than a thousand times. My Misen sauciers have been through over a thousand dishwasher cycles and still look great. There’s no discoloration, no warping, just the normal wear you’d expect from pans used nearly every day.

Misen often earns runner up status in Bon Appétit’s equipment testing, sometimes only because the long handle sparks strong opinions. But for anyone who puts their cookware in the dishwasher, whether they’re supposed to or not, these are the best pans I’ve found.

I still hand wash my other pots and pans when it’s necessary, but the nightly clean up routine no longer requires a careful inspection for sharp edges. My Misen sauciers come out of the dishwasher ready for the next meal. For a busy parent, that reliability matters more than any award.
